Top Camping Breakfasts

I’ve been  meaning to do a breakfast ideas post for a while now. I’ve even got a few drafts written up but it always seems to get pushed to the back of the queue, so I thought it’s about time that I put that right.

We mainly try to keep things simple at breakfast time, especially with a small child, or else we’d never get anything done! So here’s a couple of foolproof, tasty meals that can be knocked up easily or prepared in advance.

American Style Pancakes

This is the tried and tested batter I always use. I can’t remember where it came from, but as with many of my dishes it’s most likely a mixture of a few different recipes. I like this one as the pancakes come out nice and fluffy.

225g Plain flour

3 tsp Baking Powder

Pinch of salt

4 tblsp caster sugar

50g melted butter

125ml milk

125ml buttermilk (use all milk if you don’t have any buttermilk)

2 eggs

1 tsp vanilla extract

This is so simple as you only need one pan. Plus you can make up the batter in advance and bring it along in a plastic bottle. Remember to keep refrigerated. My favourite toppings are banana with nutella or honey. I also sometimes make blueberry sauce (this can be done in advance, just simmer some berries with a splash of water and sugar to taste). Basically you can use whatever you fancy/have to hand!

Top Tip: You could also mix up some eggs and seasoning and put that in a bottle for instant omelettes.

One Pan Bacon and Eggs

I usually try and have something relatively simple and/or healthy when camping, however there are times when only bacon and eggs will do! I saw this idea on Pinterest and thought I’d give it a bash. I presumed that, like most things I see on that wonderful site, it wouldn’t work in real life-or more to the point-I wouldn’t be able to do it successfully. However it works really well, in fact I often do it at home. The main advantage being that you get your bacon and eggs but only need one pan. Genius!

I start by using a pastry cutter to cut out a hole in the middle of the bread. (I often toast the bread circles for Finn). I usually give the bread a little fry on both sides. Then take it out and wrap the bacon around it. I then fry the side that isn’t covered in bacon first as this seals it and stops the whole thing falling apart. Then I flip it over and give the bacon-covered side a few minutes. Then crack an egg in the hole and let it cook. It will leak out a little bit but should stay largely in tact. I also flip it over right at the end to make sure the egg is cooked properly. If you just give it about 30 seconds or so the yolk should still be runny.

Top Tip: I had to use what I already had in the fridge, but streaky bacon works best.

Obviously, I cooked these in the comfort (and warmth!) of my kitchen. I’m hoping to get out and do a few more recipes in the field later on in the year. What are your favourite camping recipes? What should I try next time?

    I love pancakes! Never thought about putting pancake mix in a bottle to take with us, might have to try that and omelette too! The boys all eat meat, but I don’t, I imagine they would love the bacon and egg toast idea, certainly warm you up on a cold and wet Scottish camping trip!!

    I am a Paddle/Hike guide in Louisiana – USA. One “trick” we use is to fry the bacon a bit then pour/squirt the pancake batter over the bacon. This gives you a Bacon/Pancake and is easier to cook over a fire. Its not a round pancake in the traditional sense, but tastes great!! – Enjoy

    Love these ideas, we love camping and end up eating the same things. Never thought of making up the pancake mix prior to going. Genius!
